Focus: UK hotel business model (ADR/RevPAR/GOPPAR); regulators (HSE, FSA, Trading Standards) and devolution; HSWA & Fire Safety (RRO), UK GDPR/PECR, CRA, Equality Act; service culture & inclusive hospitality; complaints framework, reviews & evidence; risk assessment, Manual Handling, COSHH, RIDDOR; property tech stack overview (reservation→PMS→reports).
M2. Front Office Operations & Compliance — 30 h
Weeks: 3–4
Focus: FO core processes (check-in/out, cashiering, room moves); FO–HK coordination; Hotel Proprietors Act notice & lost-and-found; reservations & inventory (overbooking/no-show; CRA terms); price transparency & comms templates; FO SOPs/metrics, audits & standards; privacy in practice (lawful bases, minimisation, retention), CCTV/digital keys DPIA, breach handling; FO assessment pack (checklists & legal notices).
M3. Housekeeping Productivity & Safety — 15 h
Week: 5
Focus: PAR stocks, turn-down standards; key control & FO coordination; room status flows; COSHH/Manual Handling/PPE; biological hazards & signage; incident records; practical shift plan + room control sheet; risk register update.
M4. F&B Operations, POS & Internal Controls — 15 h
Week: 6
Focus: F&B service flows, control points & traceability; temperatures & logs; pass/expedite controls; POS workflows, gratuities, payments & reconciliation; service scenarios, cash-up & variance analysis; corrective actions & SOP updates.
M5. Menu Engineering, Events & Alcohol Licensing — 15 h
Week: 7
Focus: contribution margin & menu mix; RevPASH & seating strategy; menu redesign; banqueting/events ops; alcohol licensing (LA2003/Scotland 2005), timings & licence timetable simulation; contract essentials.
M6. UK Food Safety, HACCP & PPDS — 15 h
Week: 8
Focus: Food Safety Act & Food Safety & Hygiene (England) Regs 2013; SFBB/HACCP structure, roles & CCPs; allergens & PPDS (Natasha’s Law); HACCP flow diagrams/records; PPDS label design & guest communication.
M7. Revenue Management Fundamentals — 15 h
Week: 9
Focus: segmentation, demand signals & pick-up; forecasting (seasonality/events); dynamic pricing, parity & channel strategy; cost of acquisition; CRA-aligned price transparency; RMS lab (forecast & restrictions: LOS, CTA/CTD).
M8. Sales, Marketing & CRM (PECR/GDPR-Aligned) — 15 h

Focus: sales (corporate/leisure/MICE), pipeline & RFPs; upsell/cross-sell playbooks & account management; digital marketing & PECR (consent, cookies, Wi-Fi portal); preference logging & CRM hygiene; compliant campaign build & legitimate interest assessment.

Week: 11
Focus: departmental P&L & budgeting; variance analysis & departmental cost control; GOP and cash-flow dashboards; NLW/NMW impact modelling; licence/compliance costs; finance lab (mini P&L & GOP sensitivity).
M10. HR, Right-to-Work & Onboarding Compliance — 15 h
Week: 12
Focus: Working Time Regulations, holidays & records; Equality Act in employment, anti-harassment & inclusion; Right-to-Work checks (manual & IDVT) and evidence retention; compliant onboarding flow & file audit; Site Visit 1 (FO/HK/F&B ops — evidence capture).
M11. Quality, Data Governance & Continuous Improvement — 15 h
Week: 13
Focus: VOC & mystery audit; non-conformities, corrective actions & audit trails; tech/data deep dive (processor contracts, international transfers); DPIA for CCTV/biometrics/keys; security controls; integration lab (reservation→PMS→reports + minimisation checklist).
M12. Sustainability, ESG & Supply Chain — 15 h
Week: 14
Focus: energy, water, waste & procurement; local authority requirements & reporting; Modern Slavery Act s.54 (threshold & statement content); supply-chain due diligence workshop; Site Visit 2 (back-of-house & sustainable ops).
M13. Capstone Preparation & Compliance Pack — 15 h
Week: 15
Focus: capstone case, scope & deliverables; KPI dashboard mentoring (RevPAR, GOPPAR, NPS, etc.); SOPs review (FO/HK/F&B); compliance pack build (privacy/PECR, HACCP, fire, RTW/WTR, MSA); guided work & tutor feedback.
M14. Capstone & Final Assessment — 15 h
Week: 16
Focus: capstone rehearsal & peer review; capstone defences (panel groups A/B); integrative exam (simulated audit); programme closure (360° feedback, career pathways, lessons learned).
